The moods are not a fixed dropdown of presets. Nitaris analyses the product in your photo first and suggests treatments that suit what it actually is, so a gold temple pendant and a bag of caramel popcorn are not offered the same list. That is the difference between choosing a filter and briefing a director.
What a mood actually changes
Whichever mood you choose is applied as a whole treatment rather than a look-up: light direction and quality, the camera move, the set and props, the palette and the colour grade all follow from it. Which is why switching mood and regenerating is the highest-leverage change you can make — it is a different shoot, not the same shoot re-tinted.
